Maple Pumpkin Oatmeal Bars - October 2024
This homey treat can be as organic as the ingredients you use. And, it’s a vegan recipe.
One word of advice – use REAL maple syrup, nothing imitation. You don’t need to be in costume for this treat!
- Ingredients
 - ½ cup pure maple syrup
 - 1 cup coarsely chopped pecans
 - ½ cup melted coconut oil
 - 1 cup pumpkin puree (used canned without any sugar or spices)
 - 1 teaspoon vanilla
 - 1 cup all-purpose flour
 - 1 ½ cups quick cooking oats (NOT instant)
 - 1 teaspoon salt
 
- Directions
 - Preheat the oven to 350 degrees F.
 - Grease a 9” square baking pan with canola oil or vegetable oil.
 - Dust with flour and tap out the excess.
 - In a medium bowl, toss together pecans with the maple syrup.
 - Set aside for 10 minutes.
 - Stir the oil, pumpkin, and vanilla into the pecan mixture.
 - Sift the flour and salt together into a large bowl.
 - Add the oats and mix with a fork.
 - Add the pumpkin mixture and stir (large wooden spoon) until well combined.
 - Using a spatula (or clean hands), spread the dough evenly into the prepared pan
 - Bake for 35 minutes or until the top is golden and the edges are starting to pull away from the sides.
 - Remove the pan from the oven and let cool for at least 1 hour.
 - Cut just before serving.
 - 12-16 pieces.
