Kahlua Chocolate Chip Cookies -

When your tax return has been filed, breathe a sigh of relief and bake! These cookies are delicious beyond belief. They are the antidote to the pain of assembling papers, folders and e-info.

Consider putting some cookies in a gift bag for your accountant. The little bit of liquor in these treats will give both of you the boost needed. You might just get a deduction on the bill.

The recipe can be found on pages 162 and 163 of Fat Witch Bake Sale.

  • Ingredients
  • 16 tablespoons (2 sticks) unsalted
      butter at room temperature
  • ¾ cup packed light brown sugar
  • ¾ cup granulated sugar
  • 2 large eggs
  • 2 tablespoons Kahlua or other
     coffee-flavored liqueur
  • ½ teaspoon of vanilla extract.
  • 2 tablespoons instant coffee
     granules (optional)
  • 2 ½ cups of all purpose flour
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 1 ½ cups semisweet chocolate
     chips
  • Directions
  • In a large bowl, cream the butter and sugars until light and fluffy, using an electric mixer.
  • Drop in the eggs one at a time and beat to combine.
  • Add the Kahlua, vanilla and coffee granules (if desired).
  • Continue to beat until smooth and well combined.
  • Measure the flour, baking soda and salt. Sift these ingredients directly into the batter.
  • Mix only until no trace of the dry ingredients remains.
  • Chill the dough in the refrigerator for 25 minutes.
  • Preheat the oven to 350 degrees F.
  • Grease 2 large baking sheets with butter or cooking spray. Or you can line large pans with parchment paper.
  • Using 2 soupspoons, load one of them with batter and scoop out with the other onto the prepared baking sheets.
  • Space them 2" apart.
  • Bake for 10-12 minutes or until edges are crisp and the centers are no longer shiny.
  • Remove the pan(s) from the oven. Let cool for 20 minutes or more.
  • Using a spatula, remove the cookies to a serving platter.
  • Repeat above directions if more batter.
  • Cookies will stay fresh up to 7 days stored in an airtight container at room temperature.

If desired, refrigerate immediately for 3 weeks or freeze for 3 months.
