Plain Chicken - Blog

This recipe is from one of my favorite cookbooks - The Fat Witch Bakery.  I've made several of their recipes and they never disappoint!  This brownie recipe was super easy.  They reminded me of the brownies I used to make as a child with my Mom.  These were very moist and perfectly chocolatey!

... the Fat Witch Brownie cookbook had started circulating in the library and all the recipes looked incredibly delicious. My suspicions were confirmed when one of my coworkers made some Fat Witch lemon bars, which were amazing. When the book finally came to me, I knew I would be making several of these yummy looking recipes. Here is the first of what is sure to be an onslaught of Fat Witch brownie recipes.

Lucky for me, the nice folks at Rodale Books ... offered me the opportunity to have a copy of Fat Witch Brownies: Brownies, Blondies, and Bars. This compact, pretty little book sure does have a lot of brownie recipes. Brownies are one of those things that divide people, I find. You either like cakey brownies or fudgy brownies. Whatever your brownie tendencies, you will find a recipe in this adorable book that satisfies your brownie craving.

Another brilliant book I received for Christmas (from my wonderful fellow baking aunt) is The Fat Witch Bakery book. It combines two of my favourite things, New York + Baking so this could never disappoint. The book is overflowing with so many brownies, blondie and bar recipes that I am so excited to try out. I wish I could put more than two thumbs up for this brownie.

For Christmas, I asked for the Fat Witch Browniescookbook. With a subtitle that reads: Brownies, Blondies, and Bars from New York's Legendary Fat Witch Bakery...how could I resist? As it turns out, the owner and author, Patricia Helding, is my homegirl in so many ways. Aside from the fact that she is a successful big city bakery owner, Ms. Helding is also a banker turned baker!..And nowlook at her. Opening bakeries, writing cookbooks, and even getting blogged about right here.

I love all the recipes in this book, mainly because they are "one-bowl" recipes. Chicken Legs appreciates this fact too, as he is responsible for cleaning the kitchen. I hadsuch great success with the Original Brownies and Peanut Butter Barsthat I decided to give another recipe a try. I decided on butterscotch bars. The bars are very moist and buttery. They were sweet, but not overly sweet. I really liked the combination of butterscotch and chocolate chips - it helped keep the butterscotch from being overwhelming. These bars are especially good when they are slightly warm. I didn't have any ice cream at the house, but I bet it would have been really good on top of one of these butterscotch bars!

Milk Chocolate Brownies, these brownies are sooo much better than your typical brownie because of the milk chocolate! We made these for our New Years dinner with my family and everyone loved them!.. this recipe is from one of my favorite cookbooks,"Fat Witch Brownies: Brownies, Blondies, and Bars From New York's Legendary Fat Witch Bakery" by Patricia Helding. Fat Witch Bakery is a legendary bakery in New York City that I vow to visit someday! I've made theirSnow Witches (white chocolate brownies), which are on the top 10 list of Dallas Duo's recipes for 2010.

There is something for the careful cook as well as for the experimental baker. The instructions are easy to follow and there are plenty of beautiful colored pictures to get your mouth watering. There are no funny ingredients that need to be ordered on the internet in this collection. All of the recipes make 9X9 pans. One of the best tricks I gleaned from this cookbook is to flip the entire pan of brownies or bars out of the pan and with a sharp knife and a fast chop, trim off the crispy edges to make the sides even and clean looking. Pat Helding collects the edges and sells them in a bag as witch's ends. She says they fly out of the store without broom-power.

Pecan Bars from the Fat Witch Bakery Cookbook: Sometimes you feel like a nut. Sometimes you also feel like a drink. Full of pecans and flavored with a nip of rum, these bars fit the bill. The recipe is unfussy and easy to adapt. Use walnuts, hazelnuts, or any nut combination. You can also omit the rum and they will still be fabulous. Eating one is like devouring the warm, gooey part of a pecan pie with your fingers. When Judy Graham (my partner in getting Weeknight Kitchen to you) made this Pecan Bar recipe for a neighborhood gathering, they were gone in moments and she noticed one woman discreetly picking each and every crumb off the platter

Associated Press: Get Extra Flavor by Boozing up Your Holiday Baking

We all know booze adds body to stews and roasts, but Helding says it also imparts aroma and sweetness to baked goods. It makes a classic brownie festive ... and far out confections like rum raisin bars as playful as ice cream. "More is not better," says Helding, whose cookbook "Fat Witch Brownies" (Rodale, 2010) features a few boozy bars. "You don't want the dough to get too runny." And if your finished product needs more punch? "You can add liquor to any buttercream icing," she says.

Congo Bars: Alice over at Savory Sweet Life, who reviewed Fat Witch Brownies and convinced me I had made a dreadful error in previously passing on the book (I'm not from New York--I knew nothing about the bakery). As I thumbed through each page filled with delectable brownies and bars, I came across this recipe for Congo bars...If youre wondering how the Congo bars turned out, I have three words for you. OH MY GOODNESS! I was nervous about the amount of salt called for in the crust and none in the topping but Patricia obviously knew what she was doing. The crust is perfectly salty sweet which balances the topping beautiful. These bars are truly heavenly.

Highly recommended for chocolate lovers.
Fat Witch brownies are well-known in New York as being THE BEST... Now the owner, Patricia Helding has shared her secret recipes with the world. The recipes are all very simple and scaled down to fit in a 9x9 pan. I decided to make the Intense Chocolate Brownies. Why not go all-out right from the get-go? I also decided to go a step further and make some frosting from the book as well. They were marvelous! The brownies were dense and fudgy, just the way I like them.

When I took a peek into the Fat Witch Brownie book online and saw that all the recipes are made in a 9X9 pan, I couldn't resist. I much prefer bars to cookies... I was amazed by the simplicity of this (Carrot Zucchini Bars) recipe. The whole time I was making these bars I was thinking there must be something wrong, they just seemed too easy. They turned out delicious, and moist.

Inside the famed Chelsea Market, is a little shop called Fat Witch Bakery. Recently, the good folks behind Fat Witch published a cookbook that I was lucky enough to preview. On first glance, I found many recipes I want to try (hazelnut cream cheese brownies?!? yes, please!). Ultimately, I figured that I should start with what most think they do best brownies. These brownies are a bit different than most I've made. They are light in both texture and flavor. Eating one is a gentle yet pure chocolate experience.

Ah, but there is more here than just brownies (not that brownies are not enough). There are also blondies (for a nice change) and bars. Fat Witch Brownies: Brownies, Blondies, and Bars is a simple book. Pretty much just recipes. Luscious recipes. Gorgeous recipe after recipe after okay, I licked the page.

...downloaded (Fat Witch Bakery Cookbok) to my iPad. I decided to make the original brownie first. Good choice - it was fantastic! It was very moist, rich and chocolately, but not overly sweet. I enjoyed it very much with a big scoop of vanilla ice cream... I don't think there is a single recipe that I don't want to try. They all look fabulous. The brownies are so easy to make and don't require any speciality ingredients. I chose the peanut butter bars as my next treat. They were great. They were like a big peanut butter cookie - crispy on the outside, but nice and soft on the inside.

Life's a Witch: Fat Witch Brownies is, with capital letters, a Happy Place...when I recently received their cookbook, I knew it was the classic brownie that I had to try first...they were still plenty dense and delightfully the opposite of virtuous... I can't wait to try some of the other recipes in the book, including the one for my beloved blondies, as well as some new classics--the butterscotch flip (a fancier version of the blondie-brownie), Lemon cheesecake brownies, and cranberry blondes.
